Can I just tell you how excited I am to be starting off this New Year by eating healthy! Not that we didn’t before but lets face it.. I’m from Chicago. We love our pizza and Italian Beefs from Portillos to be exact! At least once a week my husband and I will splurge on a greasy oh so good meal. 🙂
That being said we started this New Year off right by saying enough of this grease and hello to 100% goodness! The dinner I made last night had my friends on Facebook drooling at the mouth and it was #1 easy to make and #2 delicious.
Black Bean Burgers With Sofrito Recipe
2-cups black beans
1-small onion
2-celery stalks
1-can green chilies
1-teaspoon cumin
1/2 teaspoon lemon juice (fresh is best)
1/2 teaspoon salt
Combine all ingredients in a blender or food processor. Add 1-2 cups of oats until you reach the consistency to form patties. *extra* Add some corn or cilantro for a kick
Cooking your beans into burgers
Shape them into patties, (you may freeze them at this point) over medium heat warm a little oil and cook your bean burgers. I used Grapeseed oil. Top with a fresh slices of tomato and some avocado slices.
I made a side of sofrito to top the burgers with. Here is the recipe that I used:
Sofrito
2 green bell peppers, chopped
1 red bell pepper, chopped
3 medium tomatoes, chopped
4 onions, chopped
3 medium heads of garlic, peeled
1 handful of cilantro
1/2 Tbl. salt
1/2 Tbl. pepper
Throw all the ingredients into a blender. Blend until you reach the desired consistency.
