One of my favorite things to eat is a pulled pork, however I do not want to always eat heavy red meat! Jackfruit is amazing because when cooked, it resembles pulled pork. If you are a sucker for a sweet and salty taste, substituting the pork for jackfruit is the way to go. Not only is it healthier but to be honest, you will find yourself not even missing the pork! Trust me, I tested this jackfruit pulled pork recipe on a heavy meat eater and I got a thumbs up. He even thought I made it with pork! 🙂
Trader Joe’s (heaven on earth) carries green jackfruit in a can. It is perfect as jackfruit naturally is hard to cut and gets really messy. This four ingredient recipe is SO easy! Here’s what you’ll need.
Jackfruit BBQ Pulled Pork
Ingredients
- 2 Cans Green Jackfruit in Brine (20oz)
- 1 Onion, diced
- 3 Cloves garlic, minced
- 1 1/2 Cups BBQ sauce of choice
- 1/2 Cup Water
- Salt and Pepper to tate
- 6 Hamburger buns (Gluten-free if needed)
- Optional Toppings: Mayo, lettuce, cabbage slaw, avocado
Instructions
- 1. Drain and rinse jackfruit.2. In a skillet, heat 1 tbsp olive oil over medium heat. Add onion; cook for 5 minutes or until tender. Add garlic; cook for another 1-2 minutes.3. Add the jackfruit, BBQ sauce, and 1/2 cup water, salt and pepper. Stir until combined. Cook for 15 minutes. Add more water if needed, cover and cook another 15 minutes.4. Using a fork, shred jackfruit until it resembles pulled pork. Add more salt and pepper to taste. Add more BBQ if desired.5. Prepare hamburger buns as desired with optional ingredients. Top with BBQ jackfruit and ENJOY!
